I am so glad that I did because this bread is absolutely delicious. So delicious that I had a hard time waiting until the next nights dinner to be able to have another piece of it. In fact I actually two pieces of it the night I cooked it, that is just how good it is.
Cheddar Irish Soda Bread
Ingredients:
- 2 1/2 cups all purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- unsalted butter, cold cut into 4 slices unsalted butter, cold cut into 4 slices
- 2 cups shredded sharp cheddar cheese
- 1 1/4 cups buttermilk
- 1 egg
Directions:
- Preheat oven to 375º F. Spray an 8 inch round cake pan with cooking spray.
- In large bowl, whisk together the flour, baking powder, baking soda and salt.
- Add the butter to the bowl and cut it in with a pastry cutter or two knives until the mixture resembles large crumbs.
- Add in the shredded cheese and gently stir to combine.
- Add the buttermilk and egg to the bowl, stirring until everything is just combined.
- Pour the batter into prepared pan and spread the dough to evenly cover the pan.
- Bake for 40-45 minutes or until an inserted toothpick comes out clean.
- Let bread cool for 5 minutes.
- Run a knife between the bread and edge of pan to loosen the bread. Remove bread from pan and cool for 20 minutes on a cooling rack before serving.
