During the week we all have our usual lunches that we eat most everyday. However, on the weekends I like to make something different, to change it up a bit. But I also do not want to have to be in the kitchen for a long time preparing the meal, especially if I make a special breakfast that same day.
That is where this delicious meal comes in. It is super easy to prepare, the crock pot does most of the work for you, and does not require a lot of ingredients.
Crock Pot Barbecue Chicken Cheddar Sandwich
Ingredients:
- 2 pounds boneless skinless chicken breasts
- 28 ounces barbecue sauce
- black pepper, to taste
- 1 cup shredded extra sharp cheddar cheese
- hamburger buns
- dill pickle sandwich slices
Directions:
- Lightly spray a crock pot with cooking spray.
- Place chicken breasts into crock pot and season with black pepper.
- Pour 1/3 of the barbecue sauce on top of the chicken and turn the chicken to coat both sides.
- Turn crock pot on high and cook for 3-4 hours or until the chicken is completely cooked.
- Remove the chicken and shred with two forks.
- Return the chicken to the crockpot and add in another 1/3 of the remaining barbecue sauce. Stir well to mix. Add in more barbecue sauce if desired.
- Place desired amount of barbecue chicken on bottom half of bun.
- Top with about 2 tablespoons shredded cheese. If you want the cheese melted, place under the broiler until it melts.
- Top with dill pickle slices and top half of bun.
