My family was split on this recipe. Two loved it and two did not. My husband and oldest daughter did not like it while my youngest daughter and I loved it. I did not get how could you not like it!? Sausage, bacon, pepperoni, cheese and tortellini, what's not to love. Come to find out my husband and youngest daughter do not like tortellini. Not sure what it is about tortellini they do not like, because they like ravioli and both are a cheese filled pasta. Oh well, my youngest daughter and I were more than happy to eat the leftovers.
Meat Lover's Tortellini Skillet
Ingredients:
- 3 slices turkey bacon
- olive oil
- 8 ounces andouille sausage, diced
- 24 ounces marinara sauce
- 1/2 cup water
- 12 ounces dry cheese filled tortellini
- 8 ounce shredded mozzarella cheese
- 12 slices turkey pepperoni
Directions:
- Cook bacon in an oven safe skillet until crispy. Remove bacon from skillet and drain on a paper towel lined plate.
- Add enough olive oil to the bacon grease to create 2 tablespoons.
- Heat the olive oil over medium heat. Add in the diced sausage and brown.
- Add in the marinara sauce, water and tortellini, stir to mix. Bring the mixture to a boil, reduce heat to a simmer, cover and cook for 11-12 minutes or until the tortellini is tender.
- Stir the mixture and sprinkle the cheese into an even layer on top of the pasta.
- Top with sliced pepperoni. Crumble the bacon over top.
- Cover and cook an additional 3-5 minutes or until the cheese is melted.
- If desired, place the skillet in the oven under the broiler for about 2 minutes.
