I have made lots of different types of french toast and they all have once thing is common they are made with french bread, hence the name french toast. But this french toast is a little different in that it uses bagels, not french bread.
I loved using bagels in this french toast. It was a delicious change from the traditional french toast. Plus this breakfast is packed with delicious flavors.
Cherry Blueberry Coconut Chocolate Chip Bagel French Toast
Ingredients:
- 4 blueberry bagels
- 4 tablespoons unsalted butter, melted
- 1 1/4 cups milk
- 4 eggs
- 2 teaspoons almond extract
- 1/4 cup granulated sugar
- 1 cup frozen tart cherries
- 1 cup frozen blueberries
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
Directions:
- Preheat oven to 350º F.
- Cut the bagels into bite sized pieces and place on a baking sheet.
- Bake the bagels for 8-10 minutes or until toasted.
- Transfer the bagels to a large bowl and drizzle with melted butter.
- In another large bowl whisk together the milk, eggs, almond extract and sugar.
- Pour the mixture over the bagels and stir to evenly coat the bagels.
- Add in the cherries, blueberries, coconut and chocolate chips, gently stir to mix.
- Let the mixture sit for 20 minutes.
- Spray a 8x8 baking dish with cooking spray and transfer bagel mixture into it.
- Cover with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 35 minutes.
