I had two Egg Nog Latte recipes pinned on my Pinterest board and decided to make both of them since they were slightly different. I was thinking I would try them both and decide I like one better than the other. However, I ended up liking both and decided to post both because not everyone has espresso powder or can easily find it.
Both recipes have a nice egg nog flavor to them. The first recipe has spices added to it and you will notice and taste them in the drink. If you want to try the first drink, but have no espresso powder you could always substitute the water and espresso powder for a 1/2 cup strong brewed coffee, like in the second recipe.
Eggnog Latte
Ingredients:
- 4 ounces boiling water
- 2 teaspoons instant espresso powder
- 1/4 cup fat free milk
- 1/2 cup eggnog
- 1 teaspoon vanilla extract
- 1/2 tablespoon light brown sugar
- 1/8 teaspoon ground cinnamon
- pinch of nutmeg
Directions:
- Stir the espresso powder into the hot water until dissolved. Set aside.
- In a microwave safe mug whisk together the milk, eggnog, vanilla, brown sugar, cinnamon and nutmeg, until completely combined.
- Microwave for 1 minute and 30 seconds, or until the milk starts to froth up. Watch carefully, this can happen quickly.
- Remove from the microwave, whisk again and then microwave for an additional 30 seconds, or until the milk begins to froth up again.
- Remove the mug from the microwave and slowly pour in the coffee while stirring the egg nog mixture.
