Mixed Berry Muffins with White Chocolate: Savory Sweet and Satisfying

Oh my goodness, I think I may have an addiction to muffins. When my last batch was finished, it was only about two days before I was craving another muffin. I had not planned on making another muffin for a few weeks, but the craving would not leave so I had to make another batch.

I am somewhat glad I made these muffins because they are so delicious, but I am a little worried about will happen when they are gone.

Mixed Berry Muffins with White Chocolate


  • 2 teaspoons lemon juice
  • 1 cup milk
  • 1/2 cup canola oil
  • 1 egg
  • 2 cups all purpose flour
  • 3 teaspoons baking powder
  • 3/4 cup granulated sugar
  • 1 cup white chocolate chips, divided
  • 2 cups frozen mixed berries


  1. Preheat oven to 355ยบ F. Place muffin liners into a muffin tin.
  2. In a medium bowl whisk together the lemon juice, oil, milk and egg.
  3. In a large bowl stir together the flour, baking powder, sugar and 1/2 cup white chocolate chips.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Gently fold the frozen berries into the batter.
  6. Fill prepared muffin tin evenly with batter, filling each cup to the top.
  7. Sprinkle batter with the remaining white chocolate chips.
  8. Bake for 20-25 minutes or until an inserted toothpick comes out clean.
  9. Cool muffins in tin for 5 minutes and then transfer to a cooling rack to cool completely.
