Oh my goodness, I think I may have an addiction to muffins. When my last batch was finished, it was only about two days before I was craving another muffin. I had not planned on making another muffin for a few weeks, but the craving would not leave so I had to make another batch.
I am somewhat glad I made these muffins because they are so delicious, but I am a little worried about will happen when they are gone.
Mixed Berry Muffins with White Chocolate
Ingredients:
- 2 teaspoons lemon juice
- 1 cup milk
- 1/2 cup canola oil
- 1 egg
- 2 cups all purpose flour
- 3 teaspoons baking powder
- 3/4 cup granulated sugar
- 1 cup white chocolate chips, divided
- 2 cups frozen mixed berries
- Preheat oven to 355º F. Place muffin liners into a muffin tin.
- In a medium bowl whisk together the lemon juice, oil, milk and egg.
- In a large bowl stir together the flour, baking powder, sugar and 1/2 cup white chocolate chips.
- Pour the wet ingredients into the dry ingredients and stir just until combined.
- Gently fold the frozen berries into the batter.
- Fill prepared muffin tin evenly with batter, filling each cup to the top.
- Sprinkle batter with the remaining white chocolate chips.
- Bake for 20-25 minutes or until an inserted toothpick comes out clean.
- Cool muffins in tin for 5 minutes and then transfer to a cooling rack to cool completely.
