I love that these muffins are still a muffin, but with some healthiness to them. The oats adds a nice texture and help keep you full until your next meal. The muffins are not as sweet as a "normal" muffin, but they still satisfy my muffin craving and of course taste good.
Berry Oatmeal Greek Yogurt Muffins
Ingredients:
- 2 cups all purpose flour
- 1 cup old fashioned oats
- 2/3 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups nonfat Greek yogurt
- 1 1/2 tablespoons honey
- 2 eggs, lightly beaten
- 4 tablespoons unsalted butter, melted and cooled slightly
- 1 teaspoon vanilla extract
- 1 cup frozen mixed berries
Directions:
- Preheat oven to 350º F. Spray a muffin tin with cooking spray or line with liners.
- In a large bowl combine the flour, sugar, oats, baking powder and baking soda.
- In a medium bowl combine the yogurt, honey, eggs, slightly cooled butter and vanilla until completely mixed.
- Add the yogurt mixture to the flour mixture and stir just until combined.
- Gently fold in the frozen berries.
- Spoon into prepared muffin tin and bake for 20-25 minutes or until top is golden.
