I love being able to make granola bars at home instead of buying them from a store. The flavor combinations are only limited by ones imagination.
Cranberry Almond Granola Bars
Ingredients:
- 2/3 cup packed light brown sugar
- 1/4 cup creamy peanut butter
- 1/4 cup honey
- 4 tablespoons unsalted butter
- 2 cups quick cook oats
- 1/2 cup crispy rice cereal
- 2/3 cup sliced almonds
- 5 ounces dried cranberries
Directions:
- In a medium saucepan, over medium low heat, combine the brown sugar, peanut butter, honey and butter, stirring often.
- Bring mixture to a boil and cook stirring constantly for 2-3 minutes or until sugar completely dissolves.
- Add in oats and rice cereal and stir until evenly coated. Let mixture cool for 5 minutes.
- Place a piece of parchment paper in an 8x8 baking dish, leaving some overhanging the sides.
- Once the oat mixture has cooled for 5 minutes, fold in the almonds and cranberries.
- Press firmly into the prepared baking dish.
- Refrigerate for 1-2 hours to let the bars set up and then cut into bars.
