Cranberry Almond Granola Bars

Cherry Almond Granola Bars: Savory Sweet and Satisfying

I love being able to make granola bars at home instead of buying them from a store. The flavor combinations are only limited by ones imagination.

Cranberry Almond Granola Bars

Ingredients:

  • 2/3 cup packed light brown sugar
  • 1/4 cup creamy peanut butter
  • 1/4 cup honey
  • 4 tablespoons unsalted butter
  • 2 cups quick cook oats
  • 1/2 cup crispy rice cereal
  • 2/3 cup sliced almonds
  • 5 ounces dried cranberries

Directions:

  1. In a medium saucepan, over medium low heat, combine the brown sugar, peanut butter, honey and butter, stirring often.
  2. Bring mixture to a boil and cook stirring constantly for 2-3 minutes or until sugar completely dissolves.
  3. Add in oats and rice cereal and stir until evenly coated. Let mixture cool for 5 minutes.
  4. Place a piece of parchment paper in an 8x8 baking dish, leaving some overhanging the sides.
  5. Once the oat mixture has cooled for 5 minutes, fold in the almonds and cranberries.
  6. Press firmly into the prepared baking dish.
  7. Refrigerate for 1-2 hours to let the bars set up and then cut into bars.
