California Pizza Kitchen BBQ Chicken Pizza Copycat: Savory Sweet and Satisfying

I had already made a barbecue chicken pizza that was a keeper, but when I came across this recipe that was a copycat from one of my favorite restaurants, I had to make it. It is just as delicious as the other recipe I made, however there are a few differences. The chicken is cooked in the barbecue sauce instead of just mixed with barbecue sauce. The crust for this pizza is thinner and this recipe makes two pizzas, not just one.

Ingredients:

Dough

  • 1 teaspoon active dry yeast
  • 1 1/2 cups warm water
  • 4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/3 cup olive oil
  • 2 boneless skinless chicken breasts
  • 20 ounces barbecue sauce
  • olive oil

Toppings

  • 16 ounces mozzarella shredded
  • 1/2 red onion, cut in half and thinly sliced
  • chopped cilantro, to taste

Directions:

  1. Sprinkle yeast over 1 1/2 cups warm water and let stand for a few minutes.
  2. In the bowl of a stand mixer combine the flour and salt.
  3. With paddle attachment, turn mixer onto low and drizzle in olive oil.
  4. Pour in the yeast and water mixture and mix just until combined and the dough comes together, it will be sticky.
  5. Coat a separate bowl with cooking spray or a little bit of olive oil.
  6. Form dough into a ball and place in bowl, turning once to coat. Cover the bowl with a clean kitchen towel and let rise for 1-2 hours or until doubled in size.
  7. Preheat oven to 375º F. Coat a baking sheet or pizza pan with olive oil or prepare a pizza stone.
  8. Place chicken in an oven safe dish and pour about 10 ounces of barbecue sauce over the chicken breasts, you want enough sauce to to coat the chicken well. Turn the chicken once to coat both sides with sauce.
  9. Bake for 20-25 minutes or until the chicken is done.
  10. Remove chicken and shred. Return chicken to dish and coat with any remaining barbecue sauce left in the dish. Set aside.
  11. Increase oven temperature to 500º F.
  12. Divide the dough in half. Roll and stretch one piece of dough into desired thickness.
  13. Place on prepared baking sheet, pizza pan or pizza paddle.
  14. Spread the dough with desired amount of barbecue sauce.
  15. Sprinkle with half of the cheese, half of the chicken and half of the onions. Repeat with remaining dough.
  16. Bake for 15-17 minutes or until crust is golden brown and cheese is bubbly. Remove from oven and sprinkle with chopped cilantro.

Notes:
The original CPK BBQ Pizza has cilantro on it. I did not want to buy some just for this pizza, and no use for the remaining cilantro, so I choose to leave it off. Tastes great either way.
