My latest hummus creation has a subtle lime flavor and a nice spicy kick. If you want less of a spicy kick reduce the amount of jalapeños and/or red pepper flakes.
Jalapeño Lime Hummus
Ingredients:
- 1/4 cup tahini
- 2/3 cup lime juice
- 6 cloves fresh garlic
- 4 heaping tablespoons pickled jalapeños
- 2 tablespoons dried cilantro
- 1/4 teaspoons red pepper flakes
- 2- 16 ounce can garbanzo beans, rinsed and drained
- 4-6 tablespoons olive oil
Directions:
- In a food processor add in the tahini and lime juice, pulse just until combined.
- Add in the garlic, jalapeños, cilantro and red pepper flakes. Pulse until well mixed.
- Add in a handful of garbanzo beans and turn on the food processor.
- With the food processor running slowly add in the remaining garbanzo beans and then slowly add the olive oil in by the tablespoon until desired consistency is reached.
- Transfer hummus to a container with lid and refrigerate overnight.
