My husbands favorite breakfast consists of an egg over medium, tater tots, bacon and sometimes a piece of toast. If weekend breakfast was up to him it would be his favorite every single time. But thankfully it is not up to him and I get to try out many different breakfasts.
My husband enjoys my breakfasts, but none of them have the appeal to him like his favorite. That was until I made this. He said this was just as good as his favorite breakfast, maybe even a little bit better.
Breakfast Burrito
Ingredients:
- frozen tater tots
- 8 fajita sized tortillas
- 1 1/2 cups shredded cheddar cheese
- 8 eggs
- 2 tablespoons half and half
- 1 pound breakfast sausage
- black pepper, to taste
- 1 tablespoon unsalted butter
- 1/2 cup jarred jalapeño slices
- 3 Roma tomatoes, sliced
- salsa
Directions:
- Bake the tater tots according to package directions, cooking until nice and crispy.
- Warm the tortillas in either the oven or microwave and keep warm.
- In a large skillet cook the sausage until it is browned and completely cooked.
- Lightly beat together the eggs and half and half and season with black pepper.
- In a nonstick skillet melt the butter over medium heat. Pour in the eggs and cook until scrambled and no longer wet.
- Assemble the burritos by layering the cheese, eggs, sausage, tater tots, jalapeños and tomato slices in the middle 1/3 of the tortilla.
- Fold both sides of the tortilla over the filling.
- Serve with salsa if desired.
Notes:
The more filling you add to the tortillas the harder it will be to keep closed.
