The spiciness of the chili is offset by the sweetness of the Dr. Pepper. I never would of thought adding pop to chili would taste good, but it does, it really does.
Spicy and Sweet Dr. Pepper Chili
Ingredients:
- 2 tablespoon olive oil
- 1 cup shredded carrots
- 1 red pepper, finely diced
- 1/2 cup finely diced yellow onion
- 1 tablespoon minced garlic
- 2 pounds ground turkey
- 2 tablespoons cornstarch
- 2 tablespoons chili powder
- 1 tablespoon dried oregano
- 1/2 tablespoon cumin
- 1/4 cup brown sugar
- 2- 28 ounce cans crushed tomatoes
- 1- 14 ounce can low sodium kidney beans
- 12 ounce can Dr. Pepper
- 7 ounce can chipotle peppers in adobo sauce, finely diced
- Heat olive oil in a large pot, over medium heat.
- Add in the carrots, red pepper, onion and garlic and sauté for 5 minutes.
- Add in ground turkey and cook for 8-10 minutes, or until completely cooked.
- Stir in the cornstarch, chili powder, oregano and cumin and cook for 2 minutes.
- Stir in the brown sugar, crushed tomatoes, kidney beans, Dr. Pepper and chipotle peppers. Bring to a simmer and reduce heat to low.
- Simmer until completely heated through or until ready to serve. Stir occasionally.
