Sausage and Broccoli Noodle Casserole


I have made this casserole a few times tweaking it each time and now my family and I feel it is just right. It is a super delicious and comforting casserole.


In this casserole I used a homemade Alfredo sauce, to help reduce the amount of sodium in this dish. You can find that recipe here.

Sausage and Broccoli Noodle Casserole

Ingredients:
  • 32 ounces Alfredo sauce
  • 1/2 cup milk
  • 1 pound sweet Italian sausage
  • 18 ounces frozen chopped broccoli, thawed and drained
  • 16 ounces egg noodles
  • 2 cups shredded cheddar cheese<
  • 2/3 cup chopped roasted red peppers
Directions:
  1. Preheat oven to 325º F.
  2. Cook pasta according to package directions and drain well.
  3. Remove casings from sausage and crumbled into a preheated skillet. Cook until browned.
  4. In large bowl, combine Alfredo sauce and milk.
  5. Stir in sausage, broccoli, noodles, 1 1/2 cups cheese and roasted peppers. Transfer the mixture to a 9x13 baking dish and spread into an even layer.
  6. Sprinkle with remaining 1/2 cup cheese.
  7. Bake for 30 minutes or until heated through.
