One Pot Chicken Burrito Bowl: Savory Sweet and Satisfying

This dish has many things going for it and that is why I like it so much. First and foremost, it is cooked all in one skillet, which makes clean up easy. Second it is fairly simple to prepare and third it is delicious and filling.

One Pot Chicken Burrito Bowl: Savory Sweet and Satisfying

One Skillet Chicken Burrito Bowl

Ingredients:

  • 3 tablespoons olive oil
  • 1/4 cup diced yellow onion
  • 1 pound boneless skinless chicken breast, cut into bite sized pieces
  • 1/2 teaspoon black pepper
  • 1 cup brown rice, uncooked
  • 1- 14.5 ounce can no salt added diced tomatoes
  • 1- 15 ounce can low sodium black beans, rinsed and drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 3/4 cups low sodium chicken broth
  • 1 1/2 cups shredded colby jack cheese

Toppings

  • 1 medium tomato, diced
  • green onions, diced
  • sour cream
  • salsa

Directions:

  1. In a large skillet heat 2 tablespoons of olive oil over medium high heat.
  2. Add onions and sauté until they start to soften.
  3. Add in chicken and black pepper and cook until chicken starts to brown.
  4. Move chicken to one side of the pan and add remaining 1 tablespoon of olive oil.
  5. Add rice to the olive oil and cook for about 2 minutes or until the rice starts to turn golden brown.
  6. Add in black beans, canned tomatoes, chicken broth, garlic powder, chili powder and cumin. Stir to mix well and bring to a simmer.
  7. Cover skillet and reduce heat to low. Simmer for 45 minutes or until rice is tender and liquid is mostly absorbed.
  8. Remove from heat and sprinkle cheese over top. Cover skillet and let sit for 2-3 minutes or until cheese melts.
  9. Garnish with desired toppings.

Notes:
This recipe can easily be doubled as long as you have a large enough skillet.
