Fiesta Dinner
Ingredients:
- 1 package taco seasoning
- 1 pound ground turkey
- 14.5 ounce can no salt added diced tomatoes
- 7 ounce can diced chilies
- 8 ounces shredded Colby cheese
- 6 tortillas
Directions:
- Preheat oven to 350º F.
- In a large skillet cook ground turkey until done.
- Follow package directions for taco seasoning.
- Add in the diced tomatoes, chilies and simmer for 15 minutes.
- Place 1 tortilla in a round casserole dish. Layer with 1/6 of the meat mixture and 1/6 of the cheese. Repeat layers ending with cheese.
- Bake for 30 minutes.
Notes:
I used my homemade taco seasoning to lower the amount of sodium in this dish.
