Chicken breaded with seasoned bread crumbs creates a nice and tender chicken breasts. The browned bits let in the pan after cooking the chicken are combined with orange juice and Italian seasoning to create a delicious sauce.
Breaded Chicken with Orange Sauce
Ingredients:
- 1/4 cup milk
- 3/4 cup seasoned bread crumbs
- 1 1/2 teaspoons grated parmesan cheese
- 1 1/2 teaspoons Italian seasoning, divided
- 1/2 teaspoon garlic powder
- 4 boneless skinless chicken breasts
- 3 tablespoons canola oil
- 2 1/4 cups orange juice
- 2 cups cooked brown rice
Directions:
- Place the milk in a shallow bowl.
- In another shallow bowl combine the bread crumbs, Parmesan cheese, 1/2 teaspoon Italian seasoning and garlic powder.
- In a large skillet heat canola oil over medium heat.
- Dip the chicken breasts in milk, coating both sides, then coat both sides of chicken in the bread crumb mixture.
- Immediately place the coated chicken in the warm skillet and cook chicken for 6-8 minutes on each side or until chicken is completely cooked and browned. Remove chicken and keep warm.
- Add the orange juice and remaining Italian seasoning to skillet, stirring to loosen the browned bits on the bottom of the pan.
- Bring the mixture to a boil and cook until sauce has reduced to about 1 cup.
- Serve the chicken over rice and top with the orange sauce.
