This soup was a huge hit with my family. My girls loved the alphabet letters in their soup and they even found some numbers. My husband and I enjoyed the overall taste and flavor of this soup.
Tomato Basil Alphabet Soup with Mini Turkey Meatballs
Ingredients:
- 3 tablespoons olive oil
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2- 28 ounce cans whole peeled tomaotes
- 6 cups low sodium chicken broth
- black pepper, to taste
- 1 tablespoon granulated sugar
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 slice sandwich bread
- 3 tablespoons milk
- 1 pound ground turkey
- 1 egg, lightly beaten
- 1 tablespoon garlic powder
- 1 cup alphabet pasta, uncooked
- In a large pot heat olive oil over medium heat. Add in onions and sauté for 4-5 minutes or until tender.
- Stir in garlic and cook for an additional minute.
- Add in tomatoes, chicken broth, black pepper, sugar, thyme and basil. Bring to a boil, cover, reduce heat to low and simmer.
- While soup is simmering prepare meatballs.
- Break bread into bite sized pieces and add to a large bowl.
- Add in milk, stir to mix and let sit for 2 minutes.
- Add in ground turkey, egg and garlic powder. Combine just until mixed and roll into small bite sized pieces. Place meatballs on a large cookie sheet until needed.
- Cook pasta according to package directions and drain. You want the pasta to be done at the same time the meatballs are done.
- Use an immersion blender to puree the soup until completely smooth.
- Return to a simmer and drop in meatballs. Give the soup a quick stir and let simmer for 5 minutes to cook the meatballs.
- Add in cooked alphabet pasta, stir and serve.
Notes:
If you do not have an immersion blender you can transfer the soup, in batches, to a blender to puree and then return to pot and bring back to a simmer.
