This is what I call a comfort dish. Creamy mashed potatoes with cheese and sausage. Truly a delicious dish.
The ingredients and directions for this dish include making the mashed potatoes. However you can always use leftover mashed potatoes. You will need 4 cups of mashed potatoes and will following the directions starting with adding the sour cream and cheese to the mashed potatoes.
Smoked Sausage Potato Bake
Ingredients:
- 6 medium russet potatoes, peeled and cubed
- 1/2 cup milk
- 3 tablespoons unsalted butter, divided
- 1 cup light sour cream
- 1 cup shredded cheddar cheese
- 14 ounces smoked turkey sausage
- 1 cup monterey jack cheese
- 2 tablespoons dry breadcrumbs
Directions:
- Preheat oven to 350º F. Spray a 2 quart baking dish with cooking spray and set aside.
- In a medium pot add potatoes and cover with cold water.
- Bring potatoes and water to a boil and boil for 15-20 minutes or until potatoes can easily be pierced with a knife.
- Drain potatoes and return to pot.
- Add in milk and 3 tablespoons butter and mash until smooth. Stir in sour cream and cheddar cheese.
- Spread half of the mashed potatoes into prepared baking dish.
- Top with sausage and spread remaining potatoes on top. Sprinkle with monterey jack cheese.
- Melt remaining tablespoon of butter and mix with bread crumbs.
- Sprinkle on top of casserole and bake for 30-35 minutes or until heated through and edges are golden brown.
