Oh my goodness is this ice cream delicious. It has great coconut flavor accented perfectly by the toasted almonds and chocolate chips. If you like ice cream and you like Almond Joys, then you will enjoy this ice cream.
Almond Joy Ice Cream
Ingredients:
- 2 cups half and half
- 2 cups heavy cream
- 1 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon coconut extract
- 1/2 teaspoon almond extract
- 1/2 cup mini chocolate chips
- 1/2 cup roasted almonds, crushed
Directions:
- Place freezer safe container, for storing the ice cream, in the freezer.
- In a large bowl combine the half and half, heavy cream and sugar. Whisk until the sugar is dissolved.
- Stir in all of the extracts.
- Pour into an ice cream maker and churn according to manufacturer's directions.
- During the last five minutes of churn time add in the chocolate chips and roasted almonds.
- Remove storage container from freezer and transfer ice cream into it. Put lid on and freeze.
