These pizza cups are a great way to enjoy pizza. Essentially you have a pizza all rolled up and baked in a muffin tin.
A great thing about these pizza cups is how customizable they are. You can use homemade pizza dough (make sure it is enough for two pizzas), like I did, or you can use the store bought kind (you will need two packages). You can also use any toppings that you like. This time I used my husbands favorite toppings.
Pizza Muffin Cups
Ingredients:
- pizza dough
- pizza sauce
- 1 cup cook crumbled turkey bacon
- 20 ounce can pineapple chunks, drained
- 2 cups shredded mozzarella cheese
- 1 cup Parmesan cheese
- Italian seasoning
Directions:
- Preheat oven according to either your homemade pizza dough recipe or the directions on the package of pizza dough.
- Spray two muffin tins with cooking spray.
- Roll out both pizza doughs into rectangles. Spread some pizza sauce onto each pizza dough, leaving a 1 inch border along the two long sides.
- Top each pizza with half of the bacon, pineapple, mozzarella cheese, and Parmesan cheese.
- Sprinkle each pizza with a little Italian seasoning.
- Starting at one of the long ends of one of the pizza, starting rolling the dough enclosing the toppings.
- Cut the dough into 1 inch pieces and place into prepared muffin tins. Repeat with other pizza.
- Bake according to either your homemade dough directions or package directions.
