I am not going to lie to you. This dish is all about the olive and tomato topping. The chicken is simply seasoned and then cooked in the skillet. It is the olives and tomatoes that really make this dish delicious.
Skillet Chicken with Olives and Tomatoes
Ingredients:
- 4 boneless skinless chicken breasts
- 1 tablespoon olive oil
- Italian seasoning, to taste
- black pepper, to taste
- 1/2 cup black olives, sliced
- 1/2 cup green olives, sliced
- 2 roma tomatoes, chopped
Directions:
- Preheat oven to 350º F.
- Add oil to an oven safe skillet and heat over medium heat.
- Season both sides of the chicken with Italian seasoning and black pepper. Place chicken in the skillet and cook for 5 minutes on each side.
- Place the skillet in the oven and cook for an additional 10-15 minute or until the chicken is completely cooked.
- Remove skillet from oven and top with olives and tomatoes.
