Lemon Green Beans
Ingredients:
- 1 pound fresh green beans, trimmed
- 1 large lemon, zest and juice
- 1 1/2 tablespoons olive oil
- black pepper, to taste
Directions:
- Fill a medium pot half full with water. Bring the water to a full boil, add green beans, reduce heat to a gentle simmer and cook the green beans for about 5 minutes or until they are just tender crisp.
- Drain the green beans.
- Add olive oil to same pot and heat. When oil is hot add the green beans, then add the lemon juice and season with pepper.
- Cook the green beans for 1 minute, stirring a few times.
- Remove the green beans from pot and garnish with lemon zest.
