Here we have all of the goodness of chicken Parmesan in a casserole. And better yet it tastes like chicken Parmesan. So, if you like chicken Parmesan then you will like this casserole and should make it.
The last time I made this dish I was unable to find fresh basil so I made it without. It does add some flavor, but it is also a garnish so you can leave it off if desired.
Chicken Parmesan Baked Pasta
Ingredients:
- 28 ounce can whole peeled tomatoes
- 1 tablespoon olive oil
- 6 garlic cloves, minced
- 1/4 teaspoon dried oregano
- 1/8 teaspoon red pepper flakes
- 2 cups water
- 1 1/2 cups low sodium chicken broth
- 12 ounces pasta
- 1 cup grated Parmesan cheese, divided
- 1/4 teaspoon black pepper
- 1 cup mozzarella cheese, shredded
- 4 boneless, skinless chicken breasts
- 2 tablespoons fresh basil, chopped
Directions:
- Add the tomatoes to a food processor and pulse until the tomatoes are coarsely chopped, about 10 pulses.
- In a large oven safe skillet, over medium heat add olive oil. When the oil is hot add the garlic, oregano and red pepper flakes, cook until just fragrant, about 1 minute.
- Add in the chopped tomatoes, water, 1 cup chicken broth and the pasta to the skillet, stir to combine. Bring the mixture to a good simmer and then cover the pan and continue to simmer until the pasta is tender, about 16-18 minutes. Stir the pasta frequently as it cooks.
- Preheat oven to 475°F while the pasta is cooking.
- Once the pasta is tender, remove the cover and stir in 3/4 cup of the Parmesan cheese, all of the black pepper and chicken. If the mixture seems dry add as much of the remaining 1/2 cup chicken broth as you desire.
- Sprinkle the top evenly with the mozzarella cheese and remaining Parmesan cheese.
- Transfer skillet to oven and bake for 5-10 minutes or until the cheese has melted and bubbles around the edges. Garnish with basil.
