Hopefully spring is on its way soon! I am so done with this winter! I am ready to move on from soups and chilies and start making some yummy ice creams and smoothies. But until then enjoy this hearty, creamy and delicious soup.
Bacon Cheeseburger Soup
Ingredients:
- 1 pound ground turkey
- 12 ounces turkey bacon, cooked and crumbled
- 3/4 cup onion, chopped
- 3/4 cup carrots, shredded
- 3/4 cup celery, diced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 4 tablespoons unsalted butter, divided
- 3 cups low sodium chicken broth
- 4 cups potatoes, peeled and diced
- 1/4 cup all purpose flour
- 2 cups cheddar cheese, shredded
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon black pepper
- 1/4 cup sour cream
Directions:
- In a large pot brown the ground turkey. Drain, if needed, and set aside.
- In the same pot add 1 tablespoon butter and melt.
- Add in onion, carrots, celery, parsley, basil and sauté until tender.
- Add in chicken broth, potatoes, ground turkey and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
- In a small saucepan add the remaining butter and melt.
- Add in the flour, cook and stir for 3-5 minutes or until bubbly.
- Add this mixture to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low.
- Stir in cheese, milk, heavy cream and pepper. Cook and stir until cheese melts.
- Add in the bacon and stir.
- Remove from heat and stir in the sour cream.
