These chicken strips are a unique twist to the traditional chicken strip. Using ground almonds gives them a different taste, but a good different taste. And let's not forget that they are baked not fried.
Almond Crusted Chicken Strips
Ingredients:
- 1/2 cup almonds
- 1/4 cup whole wheat flour
- 1 1/2 teaspoons paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry mustard
- 1/8 teaspoon black pepper
- 1 1/2 teaspoons olive oil
- 4 egg whites
- 1 pound boneless skinless chicken breasts
- cooking spray
Directions:
- Preheat oven to 475º F. Place a wire rack onto a baking sheet and coat it with cooking spray.
- Cut chicken breasts into strip size pieces. Set aside.
- Place almonds, flour, paprika, garlic powder, dry mustard and black pepper in a food processor and process until the almonds are finely chopped and mixed well with other ingredients.
- With the food processor on slowly drizzle in the olive oil and process until well combined. Transfer mixture to a shallow dish.
- In another shallow dish whisk all of the egg whites.
- Coat each chicken strip in the egg whites and then coat with the almond mixture.
- Place the coated chicken strips on the prepared rack. Spray with a bit of cooking spray, turn over and spray the other side.
- Bake for 20-25 minutes or until the chicken is cooked through and golden brown.
