Oh my this soup is delicious. I really wish I had another bowl of it right now. That is the only downside of this soup, no leftovers. Unless you have less than 4 people in you family then you will be able to enjoy another bowl deliciousness. Mmmm, so good!
Creamy Tomato Tortellini Soup
Ingredients:
- 2 large garlic cloves, minced
- 2 tablespoons olive oil
- 2- 10 3/4 ounce can condensed tomato soup
- 1/4 cup sun dried tomatoes, chopped
- 2 cups half and half
- 2 cups low sodium vegetable broth
- 1 teaspoon onion powder
- 1 tablespoon Italian seasoning
- 1/2 teaspoon black pepper
- 9 ounce package refrigerated cheese filled tortellini
- 1/2 cup Parmesan cheese, shredded
Directions:
- In a medium pot, over medium heat, heat olive oil. Add garlic and saute until golden brown.
- Add in tomato soup, sun dried tomatoes, half and half, vegetable broth, onion powder, Italian seasoning and black pepper.
- Bring to a simmer.
- Add in tortellini and cook according to the package directions.
- Serve and top with Parmesan cheese.
