This bread is slightly dense and not overly sweet. But it is moist and full of tart cranberry flavor, with a hint of orange. A nice change from the light and sweet breads.
Cranberry Orange Bread
Ingredients:
- 2 cups all purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1 orange, zested
- 2/3 cup fresh orange juice
- 2 eggs, lightly beaten
- 6 tablespoons unsalted butter, melted and slightly cooled
- 1 1/2 cups fresh cranberries
- Preheat oven to 350º F. Grease a 9x5 loaf pan well and set aside.
- In a large bowl sift together the flour, sugar, baking powder. Stir in the orange rind.
- Make a well in the center of the dry ingredients and add in the eggs and melted butter.
- Stir just until the ingredients are blended. Fold in the cranberries.
- Transfer the batter to the prepared pan and bake for 45-50 minutes or until an inserted toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes and then transfer to a cooling rack to cool completely.
