After trying several quinoa recipes that did not "make the cut" in our family, I finally found one that did "make the cut". My girls, however, are still not too sure about quinoa, one minute they like it the next they don't. My husband and I, on the other hand, really like quinoa. So hopefully my girls grow to like it.
This recipe was really nice because the quinoa and broccoli both cook together in the same pot at the same time. Also, cooking in chicken broth instead of water added such nice flavor. This recipe was not overly cheesy, it had just enough to add flavor, so if you like things extra cheesy, you may want to add more cheese.
Cheesy Broccoli Quinoa
Ingredients:
- 1 cup quinoa
- 1 3/4 cups low sodium chicken broth
- 2 cups broccoli, chopped
- 1 cup cheddar cheese, shredded
- 1/4 teaspoon black pepper
Directions:
- Combine quinoa, broth and broccoli to a large saucepan.
- Bring to a boil, reduce heat to low, cover and cook for about 15 minutes or until liquid is absorbed and quinoa is tender.
- Add in cheese and black pepper stirring to combine.
