Sweet Fire Chicken

Oh my goodness this chicken. It had such good flavor. The first bite is so sweet and then all of a sudden you are hit with the spiciness. It is a get you in the back of your throat spiciness. I loved it!

Sweet Fire Chicken

This dish does take a little but of work to put it together, but it is so worth it. The sweetness combined with the spiciness is perfection. But if you do not like a lot of spiciness and I mean a lot, you will want to add less red pepper flakes.

Sweet Fire Chicken

Ingredients:

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon black pepper
  • 1/4 cup all purpose flour
  • 2 eggs, slightly beaten
  • 2/3 cup cornstarch
  • 3 tablespoons canola oil

Sauce

  • 2 teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • 2/3 cup granulated sugar
  • 1 cup water
  • 6 tablespoons white vinegar
  • 3 tablespoons cornstarch
  • 4 tablespoons water, cold

Assembly

  • 20 ounces pineapple tidbits, drained
  • 1 red bell pepper, cut into 1 inch pieces
  • 1/2 yellow onion, cut into 1 inch pieces
  • 1 tablespoon canola oil
  • green onion, sliced

Directions:

Chicken

  1. Place the flour into a shallow bowl.
  2. In another shallow bowl add the beaten eggs.
  3. In yet another shallow bowl add the cornstarch.
  4. Season the chicken with pepper.
  5. In batches, place the chicken into the flour and coat. Shake of excess flour and place into egg and coat. Finally place the chicken into the cornstarch and coat well. Continue this process until all of the chicken is done.
  6. In a large skillet heat oil over medium high heat.
  7. Add in the coated chicken and cook on both sides until golden brown and completely cooked. Do not over crowd the pan with chicken, cook in batches if necessary.
  8. When chicken is cooked place on a paper towel and set aside.

Sauce

  1. In a small bowl mix together the cold water and cornstarch, set aside.
  2. In a small saucepan combine red pepper flakes, garlic, sugar, water and vinegar. Heat over medium heat until boiling.
  3. Whisk in cornstarch mixture, whisking until sauce is thickened, reduce heat to low.

Assembly

  1. Heat oil in the same skillet used for chicken over medium high heat.
  2. Add in the red pepper and onion and cook until slightly softened, about 2-3 minutes.
  3. Add in the pineapple and cook for an additional minute.
  4. Add the chicken and sauce to the pan and heat to warm chicken back up.
  5. Serve over rice and garnish with green onions.
