This combination may seem strange to you or maybe it was just me, but I had some trouble wrapping my head around this combination. However, I am willing to try most anything once so I figured what the heck I'll give it a try.
I'm so glad I did! This dish was delicious and surprisingly all the ingredients went so well together.
Green Beans with Tomatoes, Olives and Eggs
Ingredients:
- 1 pound fresh green beans, trimmed
- 1/2 cup grape tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 2 teaspoons olive oil
- 2 hard boiled eggs, chopped
- 1/2 teaspoon black pepper
- 1/2 lemon, cut into 4 wedges
Directions:
- Bring a large pot of water to a boil and add the green beans.
- Cook for about 3 minutes or until the green beans are crisp-tender.
- Remove green beans from boiling water and immerse into a large bowl of ice water to stop the cooking.
- Cut the green beans in half and place them in a serving bowl.
- Add in the tomatoes, olives, eggs, oil and pepper.
- Gently toss to mix all ingredients.
- Serve with lemon slices.
