This chicken requires marinading for several hours. As long as you remember that, then this chicken is super easy to prepare. I always seem to forget that it needs to marinate until I am ready to make dinner. One of these days I will remember, I hope.
Anyways, the chicken comes out nice and moist and super flavorful. It is also easy to double if you need to feed a bigger crowd.
Baked Parmesan Garlic Chicken
Ingredients:
Marinade
- 1 egg, beaten
- 1/2 cup fat free milk
- 1 tablespoon lemon juice
- 1 1/2 teaspoons garlic powder
- 4 boneless skinless chicken breasts
Breading
- 1 package Italian seasoning mix
- 1/2 cup Parmesan cheese, shredded
- 1/2 teaspoon garlic powder
Directions:
- Combine marinade ingredients in either a plastic bag or a shallow dish and add chicken. If you use a shallow dish and the marinade does not cover the whole chicken breast, I would recommend turning the chicken halfway through the marinade process, to give both sides a chance to sit in the marinade.
- Let the chicken marinade for a few hours.
- Preheat oven to 400 degrees.
- Combine the cheese, spice mix and garlic powder in a shallow bowl.
- Remove the chicken from the marinade, coat both sides well with dry spice mixture and place into a shallow baking dish.
- Bake for 20-25 minutes or until the chicken is completely cook.
