Almond Joy Fudge

Almond Joy Fudge

My mom's birthday was coming up and my girls wanted to make a special dessert for her. Since the dessert had to travel with us to a different state, I wanted to make something that would travel easily and be easy to keep cool in the heat. Since my mom's favorite candy is an Almond Joy, we decided to make this Almond Joy fudge for her.

This fudge turned out very delicious, well worth making. However, the next time I make it I will use dark chocolate Hershey's Kisses and dark chocolate candy melts. I feel that it will taste even better than it already is.

Almond Joy Fudge

Ingredients:

Fudge Layer

  • 1 1/2 cups milk chocolate Hershey's Kisses, unwrapped
  • 1 1/2 cups chocolate candy melts
  • 14 ounce can sweetened condensed milk

Coconut Layer

  • 14 ounce bag sweetened shredded coconut
  • 1 cup powdered sugar
  • 1/2 cup + 1 tablespoon sweetened condensed milk
  • 30 raw almonds, whole

Chocolate Candy Layer

  • 1 cup chocolate candy melts

Directions:

  1. Line a 9x9 inch baking dish with parchment paper and lightly spray with cooking spray.

Fudge Layer

  1. In a medium saucepan, over low heat, melt the Hershey's Kisses, chocolate melting candy and the sweetened condensed milk until smooth.
  2. Pour into the prepared dish and smooth into an even layer. Set aside.

Coconut Layer

  1. In a large bowl combine the coconut, sweetened condensed milk and powdered sugar. Mix together until thoroughly combined. You can do this by hand, which will take some work or you can use a stand mixer.
  2. Use another 9x9 inch pan lined with parchment paper and place coconut mixture in it.
  3. Use a rubber spatula and spread the mixture into an even layer.
  4. Using the parchment paper as handles lift the coconut layer out.
  5. Hold the coconut layer in one hand on the underside and using the other hand roll back a bit of the parchment paper to expose the coconut layer.
  6. Place the part of the coconut layer that is exposed on the fudge layer and pull back the remaining parchment paper coconut layer is now on the fudge layer. Press down gently.
  7. Spread the almonds evenly over the coconut layer.

Chocolate Candy Layer

  1. Microwave the chocolate melts for 1 minute.
  2. Stir until smooth and pour evenly over the almonds.
  3. Spread with a rubber spatula into an even layer if needed. Spread carefully as the almonds will move.
  4. Refrigerate until firm.
  5. Lift the fudge out using parchment paper as handles.
  6. Flip fudge over so fudge layer is now on top and cut into 1 inch cubes. Serve and refrigerate leftovers.
