Taco Macaroni and Cheese

Taco Macaroni and Cheese: Savory Sweet and Satisfying

This dish, even though it is not the healthiest, is delicious. It combines the flavors of macaroni and cheese and tacos. There is plenty of cheesy taco sauce that coats the pasta and make it nice and creamy.

I use my own homemade taco seasoning mix for several reasons, and I encourage you it give it a try. It is simple and easy to make.

Taco Macaroni and Cheese

Ingredients:

  • 1 pound shell pasta
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 package taco seasoning, homemade or store bought
  • 1 cup salsa
  • 8 ounce package reduced fat cream cheese, cut into chunks
  • 2 cups fat free milk
  • 1/2 cup sour cream
  • 2 cups Mexican cheese blend, shredded

Directions:

  1. Cook pasta according to package directions, drain and return to pan.
  2. In a skillet on medium-high heat cook ground turkey.
  3. Once turkey is done, drain off excess fat and add garlic cooking and stirring for 30 seconds.
  4. Add taco seasoning and salsa stirring to combine.
  5. Reduce heat to low to keep warm until needed.
  6. In a medium saucepan over medium-high heat, add cream cheese, milk and sour cream stirring to combine. Cook, stirring occasionally, until cream cheese is melted and the mixture is bubbling and slightly thickened.
  7. Turn off heat and stir in shredded cheese.
  8. Add cheese sauce and ground turkey to pasta stirring to combine.
