Strawberry Banana Bread
Ingredients:
- 2 cups all purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1/4 cup butter, softened
- 2 eggs
- 1 1/2 cups mashed ripe bananas
- 1/3 cup fat free Greek yogurt
- 2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 cups diced strawberries
Directions:
- Preheat oven to 350°F.
- Coat a loaf pan with cooking spray and a light dusting of flour. Set aside.
- In a medium bowl whisk together the flour, baking soda, salt and cinnamon.
- In a large bowl combine the sugar and butter beating with a mixer at medium speed until well blended.
- Add in the eggs one at a time beating well after each addition.
- Add in the banana, yogurt, vanilla and almond. Beat until well blended.
- Add in the flour and beat on low speed just until blended. Carefully fold in strawberries.
- Pour the batter into prepared pan and bake for 60-70 minutes or until an inserted toothpick comes out clean.
- Cool in pan for 10 minutes on a wire rack.
- Remove from pan and cool completely on wire rack.
