Mocha Pancakes with Mocha Syrup: Savory Sweet and Satisfying

Anytime I get the chance to add coffee into a recipe, it excites me. I love coffee so much, that not only do I enjoy drinking it, but I enjoy the flavor of it foods.

These pancakes not only have coffee in them, but also chocolate, giving them an amazing mocha flavor. It seems like that would be delicious enough, but then they are topped with the most delicious mocha syrup. Taking these pancakes to the next level.

Mocha Pancakes with Mocha Syrup

Ingredients:

    Mocha Pancakes

  • 1 1/3 cups half and half
  • 1 egg
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 tablespoons espresso powder
  • 1 tablespoon granulated sugar
  • 1 tablespoon brown sugar
  • 1/2 cup chocolate chips
  • Mocha Syrup

  • 1/2 cup brewed coffee
  • 1/4 cup cocoa powder
  • 1/4 cup + 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon unsalted butter

Directions:

    Mocha Pancakes

  1. Preheat a griddle.
  2. In a large bowl, whisk together the half and half and egg. Slowly drizzle in the melted butter while whisking.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, espresso powder and both sugars.
  4. Add the dry ingredients into the wet and mix just until combined.
  5. Using a 1/4 measuring cup, scoop out the batter and pour onto the hot griddle. Sprinkle some chocolate chips on top. Cook until the pancakes are browned on the bottom. Flip the pancakes over and cook on the side.

    Mocha Syrup

  1. In a small saucepan add the brewed coffee, cocoa powder and sugar. Mix everything together and heat over medium heat, until the mixture starts to thicken, about 10 minutes, stirring often.
  2. Remove from the heat and stir in the vanilla extract and butter, stirring until everything is well incorporated. Pour on top of the pancakes.

Notes:
The half and half may be substituted with whole milk.
