Bacon Cheddar Little Potatoes

Bacon Cheddar Little Potatoes: Savory Sweet and Satisfying

I love potato side dishes where I do not have to boil the potatoes first and then put the dish together and then bake it. This dish skips the step of boiling the potatoes first. The potatoes cook in the oven with all of the other ingredients, creating an easy and delicious side dish.

The potatoes used in this dish are Blushing Belle Little Potatoes and I had no trouble finding them in the grocery store. They were located with all of the other potatoes and are very similar to the baby red potatoes. In fact, if you can not find the Blushing Belle potatoes, you could substitute them for the baby red potatoes.

Bacon Cheddar Little Potatoes

Ingredients:

  • 1.5 pounds Blushing Belle Little Potatoes
  • 1 small yellow onion, diced
  • 2 teaspoons seasoned salt
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter, cubed
  • 2 cups three cheese blend
  • 1 cup (about 16 slices) cooked and crumbled bacon
  • sliced green onions

Directions:

  1. Preheat the oven to 400º F. Spray a 8x8 baking dish with cooking spray.
  2. Slice the potatoes in half lengthwise and place in a large bowl. Add in the onions, seasoning salt and garlic powder. Stir until the potatoes are evenly coated in the seasonings.
  3. Put the potatoes in the prepared baking dish and top with the cubed butter. Bake, uncovered, for 30 minutes or until the potatoes are fork tender.
  4. Remove the baking dish from the oven and sprinkle the cheese over top and the crumbled bacon. Return the baking dish to the oven and bake for another 8-10 minutes, or until the cheese has melted.
  5. Top with green onions before serving.
