What do you do when you are cleaning out your freezer and need to use up some ham? You take the flavors of chicken cordon bleu and put them in a rich, creamy and cheesy soup.
Chicken Cordon Bleu Soup
Ingredients:
- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 2 1/2 cups half and half
- 2 1/2 cups milk
- 1 tablespoon chicken base
- 8 ounces cream cheese, room temperature
- 2 1/2 cups cooked, shredded chicken
- 1/2 cup cooked and crumbled bacon
- 1 cup cubed ham
- 2 cups shredded Swiss cheese
Directions:
- In a large pot melt the butter over medium heat. Add in the flour, stir and cook for 1 minute.
- Slowly add in the half and half, milk and chicken base, while whisking. Heat for a few minutes, until mixture is slightly warm.
- Add in the cream cheese and stir constantly until the mixture comes to a boil.
- Stir in the chicken, bacon and ham.
- Reduce the heat to low and stir in the shredded cheese until melted.
Notes:
Instead of the chicken base you can substitute it for 2 chicken bullion cubes, crushed.
I used turkey bacon.
