I love how easily this bread came together, but hated how long it took to bake. But the results was well worth the wait. A moist bread that was the perfect combination of sweet and tart.
Cream Cheese Cranberry Loaf
Ingredients:
- 1 cup unsalted butter, room temperature
- 8 ounces cream cheese, room temperature
- 1 1/2 cups granulated sugar
- 4 eggs, room temperature
- 1 1/2 teaspoons vanilla extract
- 2 cups all purpose flour
- 1 1/2 teaspoons baking soda
- 2 cups cranberries
- Preheat the oven to 350º F. Lightly grease a 9x5 inch loaf pan with non stick cooking spray.
- In a large bowl or the bowl of a stand mixer, cream together the butter, cream cheese and sugar. Then add the eggs in 1 at a time, beating well after each addition. Add in the vanilla extract and mix.
- In another bowl, whisk together the flour and baking soda.
- Using a spoon, gradually add the dry ingredients to the wet, mixing just until incorporated.
- Gently fold the cranberries into the batter. Pour the batter into the prepared baking dish.
- Bake for 60-70 minutes, or until an inserted toothpick comes out clean. Allow to cool for 15 minutes in the pan on a wire cooling rack. Remove the loaf from the pan and serve.
