Cream Cheese Cranberry Loaf

Cream Cheese Cranberry Loaf: Savory Sweet and Satisfying

I love how easily this bread came together, but hated how long it took to bake. But the results was well worth the wait. A moist bread that was the perfect combination of sweet and tart. 

Cream Cheese Cranberry Loaf

Ingredients:
  • 1 cup unsalted butter, room temperature
  • 8 ounces cream cheese, room temperature
  • 1 1/2 cups granulated sugar
  • 4 eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1 1/2 teaspoons baking soda
  • 2 cups cranberries
Cooking Directions:
  1. Preheat the oven to 350º F. Lightly grease a 9x5 inch loaf pan with non stick cooking spray.
  2. In a large bowl or the bowl of a stand mixer, cream together the butter, cream cheese and sugar. Then add the eggs in 1 at a time, beating well after each addition. Add in the vanilla extract and mix.
  3. In another bowl, whisk together the flour and baking soda.
  4. Using a spoon, gradually add the dry ingredients to the wet, mixing just until incorporated.
  5. Gently fold the cranberries into the batter. Pour the batter into the prepared baking dish.
  6. Bake for 60-70 minutes, or until an inserted toothpick comes out clean. Allow to cool for 15 minutes in the pan on a wire cooling rack. Remove the loaf from the pan and serve.
