A several months ago I pinned about 5 different Chex mix recipes and I have been slowly making my way through the list and trying them. Some have been keepers while others have not made the cut. This is the last new one in my list to try and it turns out it was a keeper. The chili flavor with a subtle lime taste was delicious. Plus we loved the addition of the Cheez-It crackers and corn chips.
Chili Lime Chex Mix
Ingredients:
- 8 cups Corn Chex cereal
- 1 cup Cheez-It Crackers
- 1 cup mini pretzel twists
- 1 cup corn chips
- 6 tablespoons unsalted butter
- 1 tablespoon lime juice
- 1 lime, zest (about 1 teaspoon)
- 2 teaspoons chili powder
- 1/2 teaspoons garlic powder
- 1/2 teaspoon onion powder
- 1/8 teaspoon cayenne pepper
Directions:
- Preheat the oven to 250º F.
- In a large bowl combine the cereal, crackers, pretzels and corn chips.
- In a small microwave safe bowl, microwave the butter until melted, about 40 seconds. Stir in the lime juice, lime zest and seasonings. Pour this mixture over the cereal mixture and gently stir until everything is evenly coated.
- Spread the mixture into an even layer on a baking sheet. Bake for 1 hour, stirring every 15 minutes. Cool and store in an airtight container.
