Dill Pickle Bacon Grilled Cheese


A grilled cheese sandwich always make a delicious lunch, but when you add bacon to said grilled cheese sandwich it makes it even better. You wouldn't think it could get better but it does with dill pickles added. Now I may be biased, since I love dill pickles, but it really made the sandwich even more delicious. 

Dill Bacon Grilled Cheese

Ingredients:

  • 6 slices bacon
  • 8 slices bread
  • 6 dill pickle sandwich slices
  • 8 slices cheddar cheese
  • 4 ounces shredded mozzarella cheese

Directions:

  1. In a skillet, cook the bacon until crisp. Place on a paper toweled lined plate. Remove most of the bacon grease, leaving just a little.
  2. Top 4 slices of bread with 1 piece of cheddar cheese, 1 1/2 pickle slices, 1 ounce of shredded mozzarella, about 1/4 cup, 1 1/2 pieces of bacon and another slice of cheddar cheese. Place remaining bread slice on top.
  3. Place the sandwiches in the skillet and cook over medium low heat, until the bread is toasted to your liking. Flip the sandwiches over and cook on the other side until toasted and cheese is melted.

Notes:
I used turkey bacon.
