Jalapeño Popper Corn Chowder

Jalapeño Popper Corn Chowder: Savory Sweet and Satisfying

I love that I am not the only one that enjoys blending the flavors of a jalapeño popper in various dishes. This time a jalapeño popper meets creamy corn chowder.

You can control the spicy in this dish by leaving in the seeds and the membranes of the jalapeños or taking them out, since that is where the majority of the heat comes from. I personally left them in two and took them out of two and it gave the soup a little spicy kick.

Jalapeño Popper Corn Chowder

Ingredients:

  • 3 slices turkey bacon
  • unsalted butter unsalted butter
  • 1 cup diced jalapeños (about 4 jalapeños)
  • 1/2 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 3 cups low sodium chicken broth
  • 8 ounces cream cheese, softened and cut into 8 inches
  • 1 cup shredded cheddar cheese
  • 2 cups frozen corn, thawed

Directions:

  1. In a large pot cook the bacon until crisp. Remove the bacon and place on a plate lined with paper towel. Let cool and then crumble. Leave any bacon drippings in the pot.
  2. Add the butter to the pot with the drippings and let it melt. Add in the jalapeños and onions and cook until the onions start to brown, stirring occasionally, about 3-5 minutes.
  3. Add in the garlic and cook for 1 minute, stirring often.
  4. Add in the flour and mix well for 1-2 minutes.
  5. Slowly stir in the broth mixing well. Bring the mixture to a boil, turn the heat down to a simmer and cook stirring occasionally until the soup has slightly thickened, about 5-7 minutes.
  6. Add in the cream cheese and the cheddar cheese. Stir until both cheeses have melted and are fully incorporated. Add in the corn and cook for another 5 minutes or until the corn is heated. Stir in the crumbled bacon and serve.
