My oldest daughter wanted an ice cream cake made with cookies and cream ice cream for her birthday dessert. Since she loves Oreos so much I decided to use Oreos for the entire cake. Oreo crust, Oreos on the side filled with Oreo ice cream.
Easy to make, tastes delicious and most importantly my daughter loved her Oreo ice cream cake.
Oreo Ice Cream Cake
Ingredients:
- 25 Oreos, plus more for lining the sides of the pan
- 5 tablespoons unsalted butter, melted
- 5-6 cups cookies and cream ice cream, softened
- whipped cream
Directions:
- In a food processor finely crush the Oreos. Pour in the butter and pulse until well combined. Transfer the mixture to a 9 inch springform pan and press down into the bottom to form a crust.
- Take whole Oreos and line the sides of the springform pan gently pushing them down into the crust to help them stay up.
- Place the softened ice cream on top of the crust and about 3/4 of the way up the Oreos on the side. Place the pan in the freezer for at least 4 hours or until the ice cream has hardened.
- Carefully remove the sides of the springform pan and decorate the top with whipped cream. Serve immediately.
Notes:
I used my homemade Cookies and Cream Ice Cream for this cake, but you can use store bought.
