Cheesy Orzo with Smoked Sausage and Broccoli: Savory Sweet and Satisfying

My youngest daughter does not like rice. I have actually given up trying to get her to like rice. As for this dish I was sure she would like it. It has cheese and sausage which are some of her favorite foods, plus broccoli and pasta which she also really enjoys. But apparently she does not like orzo. I made sure to explain that it looks like rice but it is not, even showed her the box of orzo. No luck she took one bite and declared orzo was gross just like rice. Oh well, at least everyone else loved it!

Smoked Sausage and Cheesy Orzo

Ingredients:

  • 1 1/2 cups uncooked Orzo
  • 2 tablespoons olive oil
  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 1 cup frozen chopped broccoli
  • 16 ounces smoked sausage, sliced 1/2 inch thick slices
  • 1/3 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • black pepper, to taste

Directions:

  1. In a large pot, cook the orzo according to the package directions. During the last 3 minutes of cook time add the broccoli. Drain the orzo and broccoli.
  2. While the orzo is cooking, heat the oil in a large skillet over medium heat.
  3. Add in the onion and cook until it start to soften. Add in the garlic and sausage and cook until the sausage is browned.
  4. Add in the cooked and drained orzo and broccoli.
  5. Reduce the heat to medium low and add in the milk and cheese. Stir until the cheese has completely melted. Season with black pepper.
