Green Chili Rice

Green Chili Rice: Savory Sweet and Satisfying

This side dish comes together quick and easy and is creamy with a subtle spice. If you would like a little more spice switch out the diced chilies for diced jalape├▒os. For an even quicker meal use white rice or even minute rice. I used brown rice because that is what I always have on hand and we enjoy the most.

Green Chile Rice
Ingredients:
4 cups cooked rice
2 cups shredded mozzarella cheese
2 cups light sour cream
4 ounces diced chilies

Directions:
Preheat the oven to 400┬║ F. Lightly spray an 8x8 baking dish with cooking spray.

In a large bowl combine all of the ingredients and mix well. Transfer the rice mixture to the prepared baking dish and smooth into an even layer.

Bake for 20 minutes or until heated through and starting to bubble.

Notes:
4 cups cooked rice is approximately 1 1/3 cups uncooked rice.
