Cheesy Beans and Rice

Cheesy Beans and Rice: Savory Sweet and Satisfying

With this side dish there are several changes you can make to tailor the dish to your liking. I used brown rice, because that is what my family prefers, but you could use white rice. I also used a hot salsa so it would have a nice spicy heat to it, but you can use a milder salsa for less spice. Plus you can use any type of cheese you prefer.  Whatever variety of ingredients you choose to make it, it is still a simple and easy side dish that is flavorful. 

Cheesy Beans and Rice

Ingredients:

  • 1 cup uncooked rice
  • 1 cup salsa
  • 1 lime, juiced
  • 15 ounce can black beans, drained and rinsed
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded mozzarella cheese

Directions:

  1. Cook rice according to package directions, using the amount of water suggested for 1 cup of rice.
  2. While the rice is cooking lightly spray a 8x8 baking dish with cooking spray and preheat the oven to broil.
  3. Once rice has completely cooked stir in the salsa and lime juice.
  4. Spread the mixture into the prepared baking dish. Top with the beans and then both cheeses. Place in the oven and bake until the cheese has melted and mixture is warmed through, about 5 minutes.
