Spinach Salad with Warm Bacon Dressing: Savory Sweet and Satisfying

I am almost always in the mood for a good salad. Especially with some of these super hot and humid days that we have been having. For me this made a great lunch. It was filling, delicious and I did not feel guilty about having seconds. This salad would also make a great vegetable for dinner.

Spinach Salad with Warm Bacon Dressing

Ingredients:

  • 12 ounces bacon
  • 2 tablespoons olive oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • fresh ground black pepper, to taste
  • 10 ounces spinach
  • 8 ounces white mushrooms, sliced
  • 1/2 small red onion, thinly sliced and run under cold water to remove hash bite
  • 1 cup cubed swiss cheese
  • 5 hard boiled eggs, sliced
  • 2 1/2 cups croutons, any flavor

Directions:

  1. In a skillet cook the bacon until crispy. Set aside to cool.
  2. Reserve 3 tablespoons of the bacon drippings and discard the rest.
  3. To the bacon drippings add the olive oil, red wine vinegar, dijon and honey. Whisk together and season with black pepper.
  4. Over medium heat, bring the mixture to a simmer and simmer for one minute, whisking occasionally.
  5. Remove from the heat and crumble 2 strips of bacon into the mixture. Stir together and set aside to cool slightly.
  6. Crumble the remaining bacon slices.
  7. In a large bowl gently toss together the spinach, crumbled bacon, mushrooms, onion slices, and swiss cheese.
  8. Drizzle with the warm bacon dressing and gently toss to combine. Top with the sliced hard boiled eggs and croutons.
