Lemon Chicken Orzo

Lemon Chicken Orzo: Savory Sweet and Satisfying

This dish comes together in just about 30 minutes, uses one pot and has a vegetable in it, making it a complete meal. There really was nothing not love about this dish. Came together quickly, not a lot of dishes to wash and tasted lemony good.

Lemon Chicken Orzo

Ingredients:

  • 1 pound boneless skinless chicken breasts
  • 1/2 teaspoon black pepper
  • 14.5 ounces low sodium chicken broth
  • 1/3 cup lemon juice
  • 2 teaspoons honey
  • 2 1/2 tablespoons light sour cream
  • 2 cups water
  • 3/4 cup orzo
  • 8 ounces frozen green beans

Directions:

  1. Cut the chicken breasts into 1 inch pieces and season with 1/4 teaspoon black pepper.
  2. In a large pot add the chicken broth and lemon juice.
  3. Bring the mixture to a boil and add in the chicken breasts. Cover the pot, reduce the heat to low and cook for 9 minutes, or until the chicken is completely cooked.
  4. Remove the chicken from the pot with a slotted spoon and set aside.
  5. Increase the heat to high and cook the sauce uncovered for 5 minutes.
  6. To the sauce, stir in the remaining 1/4 teaspoon black pepper.
  7. Whisk in the honey and sour cream. Add in the water and bring the mixture to a boil.
  8. Add in the orzo and cook for 10 minutes or until the pasta is tender and most of the liquid has been absorbed.
  9. Add the green beans in durning the last 4 minutes of the pasta cook time.
  10. Stir the chicken back into the pot.
