Sweet Potato Pizza Bites: Savory Sweet and Satisfying

When I first came across a pin for Sweet Potato Pizza Bites I immediately pinned it. Then one day as I was cleaning out my Pinterest boards I was really close to getting rid of it. As I looked at it, I did not think sweet potatoes and pizza sounded good together, but for some reason I decided to keep it. A while later I had some leftover sweet potatoes to use up and as I was searching Pinterest for some recipes and this was the only one I had saved. It still did not sound good, but I had all of the ingredients so I decided to make it anyways.

Much to my surprise, theses Sweet Potato Pizza Bites are pretty good and my whole family loved them. The only downside is these do not reheat well. They definitely taste much better when fresh.

Update:
When you let your oldest daughter makes these you end up with plenty of sauce and pepperoni on them. 

Sweet Potato Pizza Bites

Ingredients:

  • 1 large sweet potato
  • 1-2 teaspoons olive oil
  • 5 tablespoon marinara sauce
  • 1 cup packed shredded mozzarella cheese
  • 15-30 slices of turkey pepperoni

Directions:

  1. Preheat oven to 450º F. Line a baking sheet with aluminum foil or parchment paper.
  2. Rinse the sweet potato well and trim off the ends. Cut the sweet potato into 1/2 inch slices. You should get about 15 slices.
  3. Brush both sides of the sweet potatoes slices with oil and place on the prepared baking sheet. Bake for 6-8 minutes, or until the bottoms have browned and the sweet potatoes are almost tender.
  4. Remove the baking sheet from the oven and flip the sweet potatoes slices over.
  5. Top each slice with 1 teaspoon of marinara sauce.
  6. Sprinkle the mozzarella cheese evenly over the sweet potato slices.
  7. Top each slice with one piece of pepperoni.
  8. Bake for 5-8 minutes or until the cheese has melted and the edges are crispy.

Notes:
I used my Homemade Pizza Sauce in this recipe.

Depending on the size of your sweet potato, you could use more than one pepperoni on each.
