I really like a breakfast that I can prepare the night before, so all I have to do in the morning is preheat the oven and put in the breakfast. That way I do not have to spend my morning in the kitchen and can relax a little bit. Now remembering to prepare the breakfast the night before is a whole other issue, but when I do it makes my weekend mornings more relaxing.
Spicy Bagel Breakfast Casserole
Ingredients:
- 4 bagels
- 1 pound spicy breakfast sausage
- 10 ounces diced tomatoes with chilies
- 8 eggs
- 1 cup milk
- 1 teaspoon black pepper
- 1 cup shredded pepper jack cheese
Directions:
- Spray a 9x13 baking dish with cooking spray.
- Chop the bagels into bite sized pieces and place in the prepared baking dish.
- In a large skillet over medium heat, cook and crumble the sausage until browned. Drain the grease and spread the sausage over the bagels. Top with the canned tomatoes.
- In a large bowl, whisk together the eggs, milk and black pepper. Pour the mixture over the bagels. Top with the shredded cheese.
- Cover the baking dish with foil and let sit for at least 2 hours or overnight.
- When ready to bake preheat the oven to 350º F. Leave the foil on and bake for 30 minutes. Remove the foil and bake for 10 more minutes. Let sit for 5 minutes before serving.
