Cheesy Scalloped Potatoes with Ham
Ingredients:
4 tablespoons unsalted butter
1 cup diced yellow onions
2 cloves garlic, minced
1/3 cup all purpose flour
3 cups fat free milk
1/4 teaspoon black pepper
2 cups shredded sharp cheddar cheese
2 pounds russet potatoes, washed
1 pound diced ham

Directions:
Preheat oven to 350ยบ F. Spray a 9x13 baking dish with cooking spray and set aside.

Slice the potatoes super thin and place in a bowl of cold water. Set aside.

In a medium saucepan, over medium heat, melt the butter. Add in the onions and cook, stirring occasionally until tender, about 4 minutes. Add in the garlic and cook until the garlic is fragrant, about 1-2 minutes. Stir in the flour and cook for 1 minute, stirring constantly. Slowly whisk in the milk and cook until thickened, about 4-5 minutes. Add in the black pepper and cheddar cheese and stir until the cheese is completely melted. Remove the sauce from the heat.

Drain the potatoes and pat them dry. Place half of the potatoes in the prepared baking dish. Top with half of the ham and then pour half of the cheese sauce on top. Place remaining potatoes on top of the cheese sauce, top with ham and pour remaining cheese sauce on top.

Cover baking dish tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 20-30 minutes or until the potatoes are tender and casserole is bubbly. Let cool for 10-15 minutes to let it set up a bit.

Enjoy!!!

Notes:
Depending on how thinly you slice your potatoes you may need to increase your baking time.
